Cinzia Fontana

Cinzia has over 20 years of experience in food, sustainability, chemistry and communication.

She works to promote food sustainability, conviviality and cooking through community events. She gives talks on food systems and sustainability, new food products and the future of food. Cinzia works internationally to implement a new food system based on design thinking processes.

Frédérique Lecerf

Frédie has over 20 years’ experience in education and a background in community engagement.

She believes in the power of food to bring people together in kindness and solidarity and to connect us to the Earth. Driven by positive change, Frédie has enjoyed facilitating sustainability projects in her community, and cooking is an obvious offshoot from her core values. She was already sprouting seeds on her university window sill!

She is the founder of Joyfull Greens – a plant-based community cookery school soon to start in Godalming, Surrey.

The Talk

As you can see in the video, Cinzia and Frédie combined facts (such as how much food we waste in the UK, how much land is used for livestock) with tips for reducing our kitchen waste to zero. Their presentation is energetic and enthusiastic – fun to watch.

In the Q&A session, the following additional information was shared in the “chat”

  • Asparagus and broccoli stalks – chop them up and add them to a risotto or a lentil casserole
  • Put almost anything into a soup especially sprouts that are past their best or cauliflower greens
  • Freeze summer soft fruit and berries (including those you pick when you are out walking) and eat them on your porridge in winter
